And you would think the referees would be instructed to make sure the head coach knew he had that option.

The ref was talking to Zimmer, he had to know. The thinking is you can get up to the line and snap the ball quickly, with one timeout, you're not really in jeopardy of the clock running out. Hence the reason you RUN THE BALL instead of calling an 8 second pass play.
