Whatever is going on with him medically could just be bad luck and if he's dealing with recovery from a hernia of some type that can take time, especially if its in the groin area where there is a lot of sensitivity.
It does make you wonder if the Vikings either missed something other teams found in their evaluations or they decided to roll the dice. Given that they tried to trade back up for Darrisaw, I'm thinking it wasn't so much a dice roll move. It will be interesting to watch his progress over time, especially compared to Vera-Tucker.
My guess is they knew about it but it was judged to be minor. Sometimes that happens. I imagine something similar happened with Hunter and his neck injury. IIRC, Zimmer said it was very minor when it first popped up and Hunter started sitting out in training camp last year, but it ended up being pretty major.

Hernias (if that what this is) can be notoriously difficult to recover from quickly, largely because it's impossible to avoid using core muscles and the sensitivity of the area. Provided Darrisaw doesn't re-injure the area, he might have to sit out a while to allow it to heal fully.

The good news is, once fully healed he should be good as new.
