I haven't cooked (seriously) for a tailgate since the outdoor days at the Met. and it was a matter of what you could do on a couple Coleman stoves - four burners.
The biggest hits in those days were:
Early games (Noon), breakfast - Hash browned potatoes topped with smoked fish and a egg. The fish can be whatever fits your budget.
Late games - Beef, beef and more beef. I'm not a big fan of beef but that's what the gang ate. I tried other... Corned beef might have been the biggest hit when I had time to cook a day ahead, you can do anything with it from sandwiches to stew.
My favorite ever was a walleye "fish fry" on a very cold December afternoon. Served with Veggie soup and a homemade roll. I still remember that one, prepared by friends who won't tell me to this day what they put on that fish!
There was a championship game where a few of the regulars did a "Booya"... but that takes about two days and I'm not sure what goes into it, pretty much anything you can think of. They made the local news camped out on a Friday... I never tried the stuff but others said it was good.
Tailgating to me is about what you can make in the parking lot. Shouldn't be fancy, just good. It is a challenge to those who really get into it.
