We're only spending a few days in Minnesota so not sure if we can get out to St. Paul. I plan on going back next year when the new stadium opens so at that point I'll have much more time to explore.
I think you'd be just fine doing so, I took the light rail to the Panther's game last year, then bar hopped after the game, before taking the light rail home a few hours later after the crowd thinned out.

As an aside, I drove by the new stadium on my way home from work yesterday. Good LORD! The thing is an absolute beast.

What exit did you get off to go the University Stadium ?

I believe the light rail station is called Stadium Village Station - if you're coming from downtown, you transfer to the Green Line at the Downtown East Station, which is right by the NEW stadium.

yeah the only line I have used is the one that run from MOA to old stadium ....

You won't be disappointed with Butcher and the Boar. It's honestly fantastic. I recommend the lobster grilled cheese. Simply amazing.

Surly after the game would be ideal - it's less than a mile from the Bank, so you could probably just walk there after the game.

Light rail can be hectic for Viking games. I think you'd be better off using Uber. Usually the best way to go. I have used the light rail for a Viking game at the Bank, the only downside is when you leave, the line to get on is a mile long.

George and the Dragon isn't downtown, it's in SW Minneapolis, in the Lynnhurst neighborhood, so a little further, but definitely worth it. Highly recommend the Asian Hangover if you choose to dine there.

As far as bars I would recommend near my office - The Bulldog (Downtown, there's another location in Northeast) is good- Eli's is a quality spot to have a drink and grab a bite to eat (get the Egg Sandwich if you go to Eli's - delicious). Britt's Pub is really cool as well. I would try to stop in there for a drink if you get the chance.

I don't know if you've ever been, but in my biased opinion, it's a wonderful city. St. Paul is also really cool.
Frosted has given some great suggestions in this thread.

I no longer live in Minneapolis, but I do get to spend some time there each summer. I continue to think it's one of this country's underrated gems. I love it (especially in the summer!).

Another place I love is Brasa. It's a rotisserie/ Creole-Comfort food joint in my old neighborhood: Northeast (Nord East as locals say).

I didn't get a chance to hit the new Surly brew hall/ restaurant this summer, but I sure sucked down my share of Furious this summer while up in Minny. Love that stuff!

We seem to share the same tastes in a lot of things: restaurants, beer / breweries, LBers named Dawson  .

Recap:

We got in Friday and drove to Mall of America as my brother needed Vikings gear. We ate at Crave in the mall for lunch, which was fine but nothing special. We had a late dinner at 112 Eatery, which was very good. Steak tartare and the scallops were tasty apps, didn't care much for the ricotta but I'm not a big fan on that cheese in general. Entree I had the tagliatelle, I'm pretty sure they make their own pasta.

Saturday we hit some bars in St. Paul. The first was Tin Whiskers. It was alright but more than half the bar was Chargers fans. We did a bunch of flights then headed over to Happy Gnome. Ohjay, thanks for suggesting this one, this bar was awesome. TONS of craft beers. Butcher & the Boar for dinner and it lived up to the hype. I thought the sausage sampler and the thick cut pork chops were really good. We also had the long rib (good) and the steak (okay but not a fan of blue cheese). Hit a jazz club close to the hotel although the band playing wasn't playing jazz but they were pretty good.

Sunday we checked out the new stadium and had a tailgate at the preview center. We then got on the green line to the game, and when I mean get on, I mean squished in like a sardine (felt like I was back in Japan!). Lunch at the stadium. The line to take the green line back was absolutely ridiculous so we walked to Surly's. Really good beer and I liked the vibe of the outdoor area. We wandered around downtown for dinner and finally ended up at a restaurant I can't recall. Food was good but it was late and most places were closed. We also checked out Marvel bar in time for 1 drink (didn't realize last call is so early in Min). My cocktail was too sweet but I usually say that about all my cocktails, I don't know why I keep ordering them. Pretty laid back place but pricey and a bit crowded.

That's most of Minneapolis/St. Paul. Spent a day in Green Bay, Milwaukee, and Chicago as well if anyone is headed that way and interested in my takeaway. The short version is Green Bay - fans are really nice, hilarious that you park in people's yards and bench seating sucks. Milwaukee - Lakefront brewery has a great tour and good beers. Great Lakes distillery if you like spirits. Chicago - awesome architecture, soldier field looks like a UFO crashed into an old school stadium, and deep dish pizza is overrated.

Sounds like a good trip!! I'm glad you were able to spend some tim up here.

I was at GB for my uncle's funeral a few years ago, and I hated it. It was nice, quiet, and peaceful, but Packer stuff was everywhere. So annoying. Of couse, if the Vikings had half of the success as GB in the last 25 years, I would expect that here too.

I know it was like eight or ten minutes from the airport on the island. Heading away from the little grand canyon
and towards the north side of the island. I think the shopping center was called coconut something. I want
to say it was called Jake's or J.T.s shack ??? I looked online at maps and the town is Kappa I believe

it looks like the place changed to Cafe Cucco now based what I remember by looking at pics online

too bad the burger was one of the best I ever had
