Read-Option?

Can someone please explain to me what a "read-option" is, and why, in the NFL they are no longer easy? Thank you very much in advance! (again, I'm new to the game if you haven't heard me say!)

It's no longer "easy" because it's no longer "new." Teams have film on it and an entire offseason to plan to stop it. Teams also haven't run it as much this season.
