Mankato Vikings "brunch" recommendations

A buddy and I are doing an overnight next weekend in Mankato. Going to do the Schells' brewery tour, and do some general drinking and carrying on.
Looking for a good recommendation to get some early morning food and drinks for the early start London Vikings game on Sunday.
We hung out at Boulders after a training camp this summer, but not sure if they would be open and serving at that time of the AM.
